If someone is going to threaten with a knife in the back they are going to have a more defensive posture, rather than the wide open posture your attacker has in the video.
At a minimum the empty hand will be in a defensive posture and prepare for a response.
Better to train against someone with experience in knife attacks and cover all attackers than a very inexperienced knife attacker. :-)
